Winemaking Notes |
The grapes for the 2009 Muscat Canelli were harvested on October 6, 2009 at 26.6 brix. The juice was cold fermented at 52F for 18 days to preserve the delicate varietal characters of this grape. The fermentation was stopped when the sugar and acid levels were in balance which was 5.3 brix.

Persimmon Cookies
- 1/2 cup shortening
- 1 cup sugar
- 1 egg
- 1 cup persimmon pulp
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg

- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups flour
- 1 cup raisins
- 1 cup chopped nuts
|
Directions: Cream shortening and add sugar slowly. Then add egg and beat well. Add persimmon pulp, spices, salt, soda, and flour. Fold in raisins and nuts. Drop by teaspoons onto greased cookie sheet. Bake in 350 degree oven for 10 to 15 minutes.
Makes about 3 dozen cookies.
