Nonna's Shrimp Salad
  • 1lb fresh salad shrimp
  • 5 hard boiled eggs chopped
  • 1 package noodles (linguini or some other small noodle works well)
  • 1 cup chopped celery
  • 1/2 cup chopped green onions
  • 1/2 cup chopped parsley
  • Salt & pepper to taste
  • Mayonnaise
  • Directions:


    Break noodles into smaller lengths. Cook noodles, drain and cool. Add chopped ingredients, eggs, celery, onions, parsley, to noodles. Mix in enough mayonnaise to moisten. Add shrimp. Toss gently. Add salt and pepper to taste.


    This dish has made an appearance at many Lanza Family gatherings. It is especially enjoyable with a glass of Wooden Valley 's White Gamay.
